A refreshing springtime or summer treat. Also great with leftover steak! For leftovers, simply prepare mango salsa, spoon over sliced, reheated steak in a tortilla and enjoy as a sweet and savory taco.
Mango Salsa - Prepare first
3 mangoes, cut into chunks • 1 red pepper, chopped • 1/2 red onion, chopped • 1 jalapeño, chopped and seeded • 1/2 bunch cilantro, chopped • juice of 1 lime • 1/2 teaspoon sea salt
In a medium-sized mixing bowl, combine all items, cover and refrigerate 30 minutes.
Coffee Rub - Prepare coffee rub and steaks while mango salsa chills.
1/4 cup dark roast coffee • 1 tablespoon brown sugar • 2 teaspoon fresh ground black pepper • 3-1/2 teaspoon crushed oregano • 1 teaspoon sea salt • 1 teaspoon smoked paprika • 1/2 teaspoon ground coriander • 1 pinch ground turmeric • 1 teaspoon chili powder
Rub Rube's steak of your choice (ribeye , sirloin or New York strip goes well with this rub) generously with coffee rub. Grill to desired level of doneness. Spoon mango salsa over steak. Slice and enjoy.
